5 QUICK AND EASY RECIPES YOU CAN TRY AT HOME BY CHEF RAHULL SINGH.

Pune-based well renowned chef and culinary artist Rahull Singh dishes out quick and easy-to-make recipes for all you foodies. These recipes are bound to become your new favourites as they’re super easy and require minimum ingredients. Your Instagram grid’s about to go from basic and bland to uberduber delish!

1. Oat Lassi

YOU NEED:
Curd – 1 cup
Roasted oats powder- 20 gms
Milk – 5 tablespoons
Honey/sweetener of your choice – to taste
Vanilla Essence- 2 drops.

METHOD:
Mix all the ingredients in a blender.
Add ice cubes and blend it well.
Serve cold.

OAT LASSI

2. Puffed Rice & Vanilla shake

YOU NEED:
Milk – 1 and ½ cup
Puffed Rice powder – 2 tablespoons
Honey or sugar – 20 gms
Vanilla Essence – 3 drops
Cinnamon Powder – ¼ tsp

METHOD:
Mix all the ingredients in a blender.
Add ice cubes and blend it well.
Serve cold.

LEMONGRASS AND PEPPER CAPRIOSKA

3. Lemongrass & Pepper caprioska (Vegan)

YOU NEED:
Lemon grass – 20 gms
Ginger – 10 gms
Lemon zest – 1 tsp
Lemon Juice – 1 lemon
Sugar syrup – 40 ml
Crushed pepper – 1/2 tsp
Salt – ¼ tsp
Chilled water – 2 cups

METHOD:
Add crushed pepper, lemongrass, ginger, lemon zest and 1cup of chilled water in a blender and mix till it’s almost fine.
Strain the mixture and add all the remaining ingredients.
Serve it chilled.

VERSATILE GREENS

4. Versatile Greens

YOU NEED:
Greens Mix (spinach, dill, coriander, fenugreek leaves etc) – 500 gms
Grated Ginger – 20 gms
Chopped Garlic – 20 gms
Chopped Green Chilies – 10 gms
Thymol seeds(Ajwain) – ¼ tsp
Salt – to taste
Ghee or olive oil – 1 tbsp

METHOD:
Wash the greens several times. (top tip: water your plants with used water)
Chop the veggies and keep aside.
In a pan, add ghee or olive oil, ginger, garlic and green chillies.
After a quick sauté, add all the remaining ingredients. On high flame, cook till water starts oozing out.
Remove from the flame and cool it down.
Once it comes down to room temperature make a fine paste and store in an airtight container. It can be stored in the refrigerator upto 5 days and in the deep freezer for 30 days.

USES:
1- beat with eggs and make omelets.
2- Dissolve in stock and make soup.
3- Use it as a base for your gravy e.g. palak Paneer, palak chicken or palak egg curry.
4- Beat eggs, cheese, and leftover veggies into the green’s paste and bake for 15 mins on 200 degree celsius.
5- Use it as a filling for sandwiches.

5. Sesame frozen Yogurt

YOU NEED:
Curd – 100 gms
Cream- 30 gms
Roasted sesame seeds- 30 gms
Sweetener of your choice- to taste
Vanilla Essence- ¼ tsp

METHOD:
Blend it in a mixer.
Serve with lavash or pita bread.
